Let’s start at the beginning for my readers who “may” not know who Colin Fassnidge is and what his “food inspiration tenacity” is all about!
Colin Fassnidge is Head Chef at Four in Hand, a traditional old pub in Paddington, New South Wales in Australia.
Colin is also part owner of 4Fourteen in Surrey Hills, New South Wales.
Colin’s food emphasis is on fresh produce, seasonal produce, strong flavors and “nose to tail” eating.
Colin is currently a judge on the Australian reality television series My Kitchen Rules and is known for his “tough but fair comments” and I can’t wait until his role in the show is expanded; **wink wink** **nod nod**, but you didn’t hear it from me! lol
I think Colin’s Irish accent has made many contestants go weak in the knees!

Through his FOUR KITCHENS Beautiful, mouth-watering, restaurant-quality food to cook at home, Colin “inspires” passionate home cooks to create “perfect food for any event.”
“Did Colin come and cook for you?”, I “hear” you asking with excitement!
Unfortunately, Colin did not come and cook for Chef Georgio and me, but via FOUR KITCHENS Beautiful, mouth-watering, restaurant-quality food to cook at home, I do have his recipes!
I am not usually a person who enjoys reading Introductions in books; don’t know why!
I can only surmise that especially when it comes to food, I am “keen and eager” to get right into the “meat of the matter” (pun intended) and have the food curiosity of a five year old when it comes to viewing food photos!
I enjoyed Colin sharing “Family is almost always responsible for your initial feelings about food, and Irish family life revolves around the table.”
Colin grew up in Dublin Ireland where “eating was a serious business.”
FOUR KITCHENS Beautiful, mouth-watering, restaurant-quality food to cook at home is broken down into Light Bites, Entrees, Meat and Poultry, Fish, Veggies, and Desserts.
I particularly enjoy Colin’s additional chapter on the Basics as Colin believes “once you have mastered the basics, you can add, subtract and explore new ideas to suit your taste.”
I have made my own Chicken, Fish, Veal, and Lamb Stock before, but to date Pork Sauce has eluded me!
I “sense” this recipe will be “on the list!”
There were many wonderful, tantalizing recipes that awaited me in FOUR KITCHENS Beautiful, mouth-watering, restaurant-quality food to cook at home.
Some of the recipes in my opinion are not for the “feint food-hearted.”
I have never made Braised Pig’s Tail at home before.
Colin considers the recipe to be his “Irish version of surf and turf.”
Colin’s Miso-Marinated Smoked King Salmon (photos and recipe) looked and sounded delicious! It was only then I read that they recipe is from the “original and best menus from 4Fourteen” and is a “real crowd pleaser.”
I loved the inclusion of recipes like Fennel Popsicles “as a cleaver way to incorporate vegetables.”
Corned Beef and Spring Vegetables with Dumplings looked delightful and would be a recipe I will try!
Venison, Oxtail and Wallaby recipes are shared for that beautiful, mouth-watering, restaurant-quality food to cook “at home feel” recipes too!
Have you ever had “food visions” of Confit Lamb Breast, Miso Eggplant Puree and Red Pepper Jam?
While choosing one of Colin’s recipes to recreate, I did have the Whole Roast Chicken with Famous Chicken Bread in my head UNTIL…..
I saw Pork Popcorn and S-Q-U-E-A-L-E-D!!!
As you know I S-Q-E-A-L A LOT when it comes to food!
The recipe YELLED out at me, “PICK ME!!!! PICK ME!!!”
I was then transformed back to that squealing “popcorn child” of three!
I don’t know WHAT it is about me and popcorn, but when I was little, ALL I ever wanted to do is make popcorn with my meals!
When mum served chicken, I wanted chicken popcorn bites.
When mum served beef, I wanted beef coated popcorn tidbits and so the “popcorn obsession” went on!
Before I share Colin’s recreated Pork Popcorn recipe with you, I also wanted to highlight some of the other recipes that entertained me:
Pickled Mussells with Hock Bouillon, Roast Marron, Mixed Grain Salad, and Swede Gratin!
Colin shared that the desserts he likes best “are the ones that challenge me!”
While I can appreciate not everyone is up to the “beautiful, mouth-watering, restaurant quality foods to cook at home” challenge, Colin’s FOUR KITCHENS cookbook has something for everyone.
When I viewed Colin’s White Chocolate Sandwich photo, it too “reminded me of my childhood”; like Colin shared too!
Would Beetroot Brownie with Vanilla and Ginger Creme Fraiche sound like it is a “food to cook at home?”
I don’t know whether it would be everyone’s “cup of tea” (pun intended), but imagine the satisfaction people would have at their next dinner party sharing they made Colin Fassnidge’s “beautiful, mouth-watering, restaurant quality foods to cook at home” too!

I think the answer would be yes!
Let’s be honest….Is FOUR KITCHENS Beautiful, mouth-watering, restaurant-quality food to cook at home for every home cook and foodie?
Probably not, but then again, if we all enjoyed the same things and foods in life, would the world would be a boring place indeed!
Getting back to my, um, I mean Colin’s Pork Popcorn!
It was a fun dish that reminded me of childhood and enjoyed the smoky chorizo taste with the pinch of this and a dash of that and…..; with star anise too!
You didn’t think I was going to give Colin’s recipe away today….did you?
Note to self….make sure to “listen to Colin” when he says not to lift the pot lide until the popping slows down!
I was curious and got “pop corned” in the eye! lol
