For those readers who have been following me for quite some time, you may remember Joanna’s Anzac Biscotti combined with a history of Anzac Day.
BiscottiI then followed with Two-Up #Anzac Slice and Cookie which, if you have not previously seen, I welcome you to read, as you will enjoy Australia’s National Game (which is solely played on Anzac Day — with very few exceptions) is illegal!

I might preface that Joanna’s Anzac Slice is a combination of combined recipes as Thermalina LOVED how much we played with Hot Cross Bagels and #Easter Hot Cross Buns Anyone? and Should #Easter Foods REALLY Be This Much Fun?

Thermalina wanted to be part of the tribute and history of Anzac Day.

Let’s move onto Joanna’s Anzac Slice, eh?

I was inspired by “the Anzac project” to try and recreate “slightly adapted” Lemon Lattice Cheesecake Slice making my own Anzac Biscuits.

As foodies, Thermalina and I decided to make everything from scratch thinking it would be fun to do!

For a start, I LOVE quark; a European style cottage cheese with a smooth texture.

Thermalina and I made cream cheese from scratch thanks to a recipe I found on ThemoBlitz; in turn giving credit that the recipe is from The Germany Book and is found on the Thermomix Forum.

Thermalina and I then made Homemade Condensed Milk from scratch thanks to a recipe from The Bush Gourmand.

We were having so much fun with our project, that we continued on with making our own Anzac Biscuits from scratch as inspired by Gastronomy but “slightly adapted.”

I have a confession to make on behalf of Thermalina and me!

We were enjoying ourselves “probably too much” and we forgot to add the shredded coconut and decided to add some sultanas that we had left over from some recent posts like Hot Cross Bagels and #Easter Chocolates Anyone? and The Butterfingers Princess Tart and Hot Cross Buns Comes To #Adelaide to name a few.

The cream cheese is above with the bagel.

The homemade condensed milk:
MilkI had to keep it away from Princess What? and Chef Georgio as Thermalina and I almost didn’t have enough for Joanna’s Anzac Slice!

Rolling the biscuit dough between two sheets of baking paper really helped roll it as thin as I could get it!

The sultanas were folded in before rolling.

OatsThe stove was pre-heated to 180C.

I removed the top piece of baking paper; the bottom was lightly sprayed with oil.

I baked the biscuit dough until golden brown; removed and allowed to slightly cool.

I then very methodically “measured” the dough and cut it into 8 equal squares (4 for the top; 4 for the bottom) as the biscuit dough recipe made a lot!

The offcuts did not go to waste as Princess What and Chef Georgio “nibbled the day away!”

It was now time for Thermalina and I to combine the recipe to create Joanna’s Anzac Slice.

Ingredients
  • Ingredients
  • 150 grams cream cheese. (see Notes)
  • 259 grams condensed milk.
  • 100 grams lemon juice, fresh
  • 20 grams of gelatine in 40 grams of boiling water. (see Notes)
  • 8 baked Anzac biscuits ~3 inches square. (see Notes)
  • Oil spray (optional)
Instructions
  1. Instructions
  2. In a stand up mixer, combine cream cheese, lemon juice, condensed milk with the dissolved gelatin until combined Speed 3. 10 seconds.
  3. Oil spay square Pyrex pan and place 4 Anzac biscuit squares.
  4. Pour above mixture over the top of the biscuits; cover with 4 Anzac biscuits; refrigerate over nite. (see Notes)
  5. Remove from fridge, cut into desired size.
  6. ENJOY!
Notes
If not making cream cheese from scratch, use full fat; not reduced fat.
If gelatine does not fully dissolve, strain through a Chux.
Cookie dough for biscuits is personal preference; after not using coconut, folded in ½ cup sultanas that had been prepared in 1 cup of boiling water for 20 minutes; drained.
May need to slightly cut biscuits to fix the Pyrex baking pan.
Make sure top biscuits are level.
